Description
Frito Corn Salad is a flavorful side dish filled with sweet corn, onions, peppers, cheese and crushed Chili Cheese Fritos. A great recipe for any cookout, celebration or potluck get together.
Ingredients
- 1 can (15 ounces) whole kernel sweet corn
- 1/2 cup diced green bell pepper
- 1/2 cup diced red onion
- 1/2 cup mayonnaise
- 1 cup shredded microbial-rennet cheese (sharp cheddar, colby-jack, or pepper jack)
- 5 ounces crushed Chili Cheese Fritos
Instructions
- Step 1: Drain corn and add to a medium size bowl.
- Step 2: Mix in bell peppers, red onion, mayonnaise and cheese.
- Step 3: Cover and refrigerate at least an hour or overnight.
- Step 4: Mix in crushed Fritos just before serving.
Notes
This recipe can be doubled as needed. It can be served as a dip with Fritos Scoops or tortilla chips. If using frozen corn, thaw and drain well. Mayonnaise can be substituted with sour cream. Optional add-ins include sliced green onions, rinsed and drained black beans, green chiles, or candied jalapeños. Store in an airtight container in the refrigerator for up to 3 days; add Fritos only before serving.
