Description

  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 5 cloves garlic, minced
  • 1 tsp paprika
  • ½ tsp red pepper flakes, optional
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tbsp lemon juice
  • 2 tbsp chopped parsley, optional
  • 1 cup long-grain white rice
  • 2 cups water or chicken broth
  • Salt, to taste
  • 1 tbsp butter

Instructions

  1. Step 1: In a medium saucepan, combine 1 cup long-grain white rice, 2 cups water or chicken broth, salt, and 1 tbsp butter; bring to a boil, then reduce heat to low, cover, and simmer for 18–20 minutes until rice is tender.
  2. Step 2: Season 1 lb large shrimp with salt, pepper, and 1 tsp paprika.
  3. Step 3: Heat 2 tbsp olive oil in a large skillet over medium-high heat, cook shrimp in a single layer for 1–2 minutes per side until pink and opaque, then remove and set aside.
  4. Step 4: In the same skillet over medium heat, sauté 3 tbsp unsalted butter and 5 cloves minced garlic for 30 seconds until fragrant.
  5. Step 5: Pour in ½ cup chicken broth and simmer for 2 minutes, scraping up any browned bits from the bottom.
  6. Step 6: Stir in 1 cup heavy cream and ½ cup grated Parmesan cheese, simmering for 3–5 minutes until the sauce thickens slightly.
  7. Step 7: Add 1 tbsp lemon juice and ½ tsp red pepper flakes (if using), then return shrimp to the skillet and toss to coat and heat through.
  8. Step 8: Serve creamy garlic butter shrimp over warm rice and garnish with 2 tbsp chopped parsley if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove with a splash of water or broth. Shrimp (without rice) can be frozen for up to 3 months.
