Instructions
- Prepare the Tortellini: Cook the tortellini according to package instructions. Drain and set aside.
- Cook the Chicken: In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper. Cook for about 6-7 minutes per side until fully cooked. Remove the chicken from the skillet and let it rest before slicing.
- Sauté Garlic: In the same skillet, add minced garlic and sauté for about 1 minute, until fragrant.
- Make the Sauce: Pour in the heavy cream and chicken broth. Bring to a simmer, then add the Italian seasoning. Stir well.
- Add Spinach and Cheese: Stir in the spinach and grated Parmesan cheese until the cheese has melted and the spinach is wilted.
- Combine Everything: Add the cooked tortellini to the skillet and gently toss until well coated in the creamy sauce.
- Slice the Chicken: Slice the cooked chicken breasts and place them on top of the tortellini mixture in the skillet.
- Final Touches: Garnish with fresh basil if desired. Allow the dish to cook for another 2-3 minutes on low heat to warm everything through.
- Serve: Remove from heat and serve immediately!
