  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 46 tortillas or flatbread
  • Salt, to taste
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons fresh parsley, chopped
  • ½ cup mozzarella cheese, shredded

Instructions

  1. Prep: Clean and devein the shrimp if necessary, pat dry, and season lightly with salt and pepper.
  2. Cook Shrimp: Heat olive oil and butter in a skillet over medium heat. Add shrimp and cook for 2–3 minutes per side until opaque; remove and set aside.
  3. Make Sauce: In the same skillet, sauté garlic for 1 minute. Stir in heavy cream, cream cheese, and Parmesan until the sauce is smooth and creamy.
  4. Combine: Return shrimp to the skillet, add Italian seasoning, and simmer briefly so flavors blend. Adjust salt and pepper as needed.
  5. Assemble: Spoon the shrimp mixture onto tortillas, sprinkle with mozzarella, roll tightly, and place seam-side down in a baking dish.
  6. Bake: Preheat oven and bake until the cheese is melted and the tops are lightly golden.
  7. Serve: Let rest for a few minutes, garnish with fresh parsley, and serve warm.

Notes

Always use freshly grated Parmesan for better melting. Do not overcook the shrimp to ensure they stay tender. Letting the roll-ups rest before serving helps them maintain their shape. For extra flavor, you can brush a little melted butter on top before baking.
