Creamy Mozzarella Shrimp Pasta

Description

This creamy mozzarella shrimp pasta is one of my family’s favorite meals. There is just the right amount of creamy Alfredo sauce to coat the shrimp and pasta. The red pepper flakes add a tasty twist to this shrimp recipe. Your family will be begging for it for dinner every night!


Ingredients

  • 12 ounces penne pasta
  • 2 tablespoons olive oil
  • 1 pound shrimp, peeled and deveined
  • 7 cloves garlic, minced
  • ¼ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon onion powder
  • ¼ teaspoon paprika
  • 3 ounces sun-dried tomatoes, cut into 1 inch chunks
  • 2 cups half and half
  • ¾ cup mozzarella cheese, grated
  • ¾ cup Parmesan cheese, grated
  • ¾ cup chicken broth
  • 1 teaspoon dried basil
  • ¼ teaspoon red pepper flakes
  • ⅛ teaspoon paprika

Instructions

  1. Step: In a large pot bring water to a boil and add 1 tsp of salt and 1 Tbsp olive oil. Cook penne noodles to al dente according to package directions. Drain and set aside.
  2. Step: Combine salt, black pepper, onion powder, and paprika in a small bowl. Sprinkle evenly over both sides of the shrimp.
  3. Step: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add shrimp and cook for 1 minute on each side until pink. Remove shrimp and set aside.
  4. Step: Reduce heat to medium, add sun-dried tomatoes and garlic to the skillet. Saute for 1 minute.
  5. Step: Add half and half to the skillet and bring to a boil. Add Parmesan and mozzarella cheese, stirring until melted and incorporated. Reduce heat to a simmer.
  6. Step: Stir in chicken broth, dried basil, red pepper flakes, paprika, and black pepper. Simmer for 5-6 minutes until the sauce thickens.
  7. Step: Add cooked pasta to the sauce and mix until coated. Add shrimp back into the skillet and gently mix.
  8. Step: Serve hot and garnish with fresh parsley and grated Parmesan.

Notes
