Description

This luxuriously creamy mushroom spaghetti recipe is quick, easy, and perfect for those weeknight meals.


Ingredients

  • 1 pound spaghetti
  • 2 tablespoons butter
  • 2 cloves garlic (chopped)
  • 3 shallots (chopped)
  • 8 ounces cremini mushrooms (cleaned and sliced)
  • 1½ cups half and half
  • Freshly grated Parmesan cheese (for serving)
  • A good handful of fresh parsley (chopped)
  • Salt and pepper (to taste)

Instructions

  1. Step: Cook the pasta in a large pot of boiling water until quite al dente (it will finish cooking in the sauce).
  2. Step: While the pasta is cooking, melt the butter in a large frying pan on medium heat.
  3. Step: Add the shallots and cook until transparent (about 3-4 minutes). Add the garlic and cook another minute.
  4. Step: Add the mushrooms and sauté until the mushrooms are fully cooked.
  5. Step: Stir in the cream and parsley, lower the heat, and simmer gently until thickened (1-2 minutes).
  6. Step: Reserve some of the pasta water and drain the pasta.
  7. Step: Add the pasta to the sauce and toss to coat, adding the reserved water as needed to loosen the sauce.
  8. Step: Serve immediately with grated cheese.

Notes

To clean mushrooms, use damp paper towels to avoid waterlogging. Avoid overcrowding the pan to ensure mushrooms brown nicely. For deeper flavor, you can add soaked dried porcini mushrooms and some of the soaking liquid.
