Description

Crack Chicken Stuffed Baked Potatoes pair creamy cheddar, smoked turkey bacon, and ranch chicken and a fluffy baked potato into one delicious meal.


Ingredients

  • 4 pounds Large Russet Potatoes (46 potatoes)
  • 1 pound Boneless skinless chicken breast (23 breasts)
  • 1 tablespoon Ranch seasoning mix
  • 4 ounces Block cream cheese
  • 3 slices Cooked smoked turkey bacon, diced or crumbled
  • 1 cup Freshly grated Sharp Cheddar Cheese
  • Optional: Extra smoked turkey bacon, chopped chives, Ranch dressing drizzle, blue cheese crumbles

Instructions

  1. Step: Add chicken to the slow cooker and sprinkle with Ranch seasoning mix.
  2. Step: Place a block of cream cheese on top of the chicken, cover, and cook on HIGH for 2.5-3 hours or LOW for about 4-5 hours.
  3. Step: Shred the chicken right in the pot using two forks and stir in 3/4 of the chopped smoked turkey bacon and 1 cup of shredded cheddar.
  4. Step: Prepare baked potatoes by baking at 425℉ for 45-60 minutes or microwaving for 7-12 minutes until fork-tender.
  5. Step: Make a lengthwise slit across the top of each potato, fluff the flesh with a fork, and season with salt and pepper.
  6. Step: Add a small pat of butter to each potato and stuff with the chicken mixture.
  7. Step: Top each potato with 1 tablespoon of shredded cheddar and a few bits of crumbled smoked turkey bacon.
  8. Step: Broil for 5 minutes or until the cheese is melted and bubbly.
  9. Step: Garnish with fresh minced chives and a drizzle of Ranch dressing.

Notes

The recipe is best enjoyed fresh. Leftover assembled potatoes can be wrapped in foil and stored in the fridge for up to 2 days. You can substitute the slow cooker by mixing pre-cooked shredded chicken with the other ingredients on the stovetop until warm.
