  • 2 tbsp Fresh Cilantro or Parsley

  2. Step: Add in the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
  3. Step: In the same pot, heat olive oil over medium heat.
  4. Step: Add ground beef and cook until browned, breaking it apart as it cooks.
  5. Step: Stir in the can of diced tomatoes with green chilies along with their juices.
  6. Step: Add softened cream cheese and beef broth to the pot; mix well until combined.
  7. Step: Sprinkle in garlic powder, onion powder, salt, and pepper while stirring continuously until smooth.
  8. Step: Add cooked elbow macaroni into the meat sauce mixture.
  9. Step: Stir until all pasta is well-coated with the creamy sauce.
  10. Step: Top with shredded cheddar cheese while still warm.
  11. Step: Garnish with fresh cilantro or parsley if desired before serving.

Notes

Ensure the cream cheese is at room temperature for a smooth sauce consistency. You can substitute ground beef with ground turkey or a plant-based ground protein for variety.
