Description

This Shrimp Fettuccine Alfredo is a major comfort food. There’s just something about a mountain of pasta consumed by a rich creamy sauce, and studded with large, tender shrimp that makes for a perfect meal. It is surprisingly easy to make and ready in under 30 minutes.


Ingredients

  • 3/4 lb fettuccine or penne pasta
  • 1 lb shrimp, peeled and deveined
  • 1 Tbsp oil
  • 1 small onion, finely chopped
  • 2 Tbsp unsalted butter
  • 1 garlic clove
  • 1/3 cup vegetable broth mixed with 1 tsp lemon juice
  • 2 cups heavy whipping cream
  • 1/3 cup parmesan cheese
  • Salt and pepper to taste
  • Sprinkle of paprika
  • Parsley or basil for garnish

Instructions

  1. Step: Cook 3/4 lb fettuccini noodles in salted water according to package instructions and drain. Do not rinse.
  2. Step: Lightly season shrimp with salt, pepper, and paprika. Preheat a large skillet to medium-high and add 1 Tbsp oil. Once hot, add shrimp in a single layer and cook 1-2 minutes per side until opaque. Remove shrimp to a separate bowl.
  3. Step: In the same pan, add 2 Tbsp butter and onion, sautéing until golden. Stir in garlic and sauté for another minute.
  4. Step: Stir in 1/3 cup vegetable broth and lemon juice mixture, scraping the bottom to deglaze the pan and reducing slightly.
  5. Step: Stir in heavy whipping cream and simmer for 2 minutes. Sprinkle in 1/3 cup parmesan cheese, stirring until creamy and smooth, then remove from heat.
  6. Step: Add about 1/4 tsp paprika and season with salt and pepper to taste.
  7. Step: Fold in the cooked shrimp and the pasta. Garnish with parsley, basil, or extra parmesan before serving.

Notes

Ensure the cream sauce does not boil after adding the cheese to prevent separation. The vegetable broth and lemon juice mixture provides a bright acidity that replaces other liquids while maintaining flavor.
