Description

  • 1 pound fresh cheese tortellini
  • 1 pound raw shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • 1/4 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Cook Tortellini: Fill a large pot with salted water and bring to a boil. Cook tortellini according to package directions until al dente, about 3-5 minutes. Drain and set aside.
  2. Cook Shrimp: Heat olive oil in a large skillet over medium-high heat. Season shrimp with salt and pepper, then cook for 2-3 minutes per side until pink and opaque. Remove shrimp from skillet and set aside.
  3. Make Sauce: In the same skillet, add garlic and sun-dried tomatoes. Sauté for 1 minute until fragrant. Reduce heat to medium and pour in the heavy cream. Bring to a gentle simmer.
  4. Finish Sauce: Stir in Parmesan cheese and cook until the sauce thickens slightly, about 2-3 minutes. Add spinach and cook until just wilted.
  5. Combine: Return shrimp and cooked tortellini to the skillet. Toss gently to coat. Season with salt, pepper, and red pepper flakes if using. Heat until warmed through.
  6. Serve: Plate immediately, garnished with extra Parmesan and black pepper.

Notes

If using frozen shrimp, ensure they are fully thawed and patted dry before cooking to prevent excess moisture in the skillet. Store leftovers in an airtight container for up to 3 days and reheat gently on the stovetop.
