Description
Shrimp stuffed salmon is a delicious, easy dinner. Perfectly cooked salmon is stuffed with a creamy shrimp and cheese mixture.
Ingredients

- 1 tbsp olive oil
- 2 – 8 oz salmon fillets
- 1 tbsp minced garlic
- 8 oz raw shrimp, no tails
- 1/3 cup mayonnaise
- 1/4 cup Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Step: Preheat oven to 350ºF.
- Step: In a medium skillet over medium heat, heat olive oil.
- Step: When oil is heated, add shrimp and garlic. Stir often, being sure not to burn the garlic.
- Step: Cook until shrimp is pink and opaque. Remove from heat.
- Step: Stir in mayonnaise, Parmesan cheese, and mozzarella cheese.
- Step: Place salmon fillets on a baking sheet lined with parchment paper.
- Step: Using a sharp knife, cut each fillet horizontally, creating a pocket for the stuffing. Be sure not to cut all the way through the fillet.
- Step: Stuff each fillet with stuffing. Be sure to save some to add to the top at the end of baking. Salt and pepper each fillet.
- Step: Bake for 20 minutes.
- Step: Remove from oven and add remaining stuffing to the top of each fillet.
- Step: Broil for 5 minutes or until golden brown. Serve and enjoy.
Notes
Greek yogurt can be used as a substitute for mayonnaise. Garlic powder can be used if minced garlic is unavailable. For extra flavor, add red pepper flakes for heat or fresh chives to the shrimp mixture. To avoid tough shrimp, cook only until they change color.
