  • 1/2 cup sour cream or Greek yogurt
  • 1 cup crumbled cotija cheese (microbial-rennet), divided
  • 2 tbsp fresh lime juice
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1.5 cups shredded Monterey Jack cheese (microbial-rennet)
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat: Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
  2. Mix Sauce: In a large bowl, combine the mayonnaise, sour cream, half of the cotija cheese (1/2 cup), lime juice, chili powder, smoked paprika, and garlic powder. Mix until smooth.
  3. Combine: Add the shredded chicken, corn, diced jalapeño, and red onion to the bowl with the sauce. Stir until everything is well coated.
  4. Assemble: Pour the mixture into the prepared baking dish and spread into an even layer.
  5. Bake: Sprinkle the shredded Monterey Jack cheese evenly over the top. Bake for 20-25 minutes, until bubbly and the cheese is melted.
  6. Garnish: Let the casserole cool for a few minutes. Garnish with the remaining 1/2 cup of cotija cheese, a sprinkle of chili powder, and fresh cilantro before serving.
