Description

Air Fryer Teriyaki Chicken Thighs are juicy chicken thighs in a sweet, savory homemade teriyaki marinade and glaze that cook to perfection in under 30 minutes. Easy weeknight dinner recipe.


Ingredients

  • 2 to 2 1/2 pounds chicken thighs (boneless skinless or bone-in skin on)
  • 1/2 cup reduced-sodium soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 1/4 cup water
  • 2 tablespoons rice vinegar
  • 1 clove minced garlic
  • 1/2 teaspoon ground ginger
  • 1 teaspoon cornstarch
  • 1 teaspoon water

Instructions

  1. Step: Combine soy sauce, brown sugar, honey, water, rice vinegar, garlic, and ginger in a small bowl and stir until sugar dissolved.
  2. Step: Place chicken and 1/2 cup of the marinade in a covered bowl or ziptop bag and refrigerate for 15-30 minutes, up to overnight.
  3. Step: Place the unused marinade in a small saucepan over medium to medium-high heat.
  4. Step: Stir 1 teaspoon cornstarch and 1 teaspoon water in a small bowl; add this slurry to the marinade when it boils, then simmer for 10-12 minutes until thickened.
  5. Step: Set aside 1/4 cup of the thickened sauce for basting and the rest for serving.
  6. Step: Preheat air fryer to 380 degrees and line the basket with parchment paper or aluminum foil.
  7. Step: For boneless chicken: air fry top side down for 9 minutes, brush with sauce, flip and air fry for 5 minutes, then brush again and air fry for 4-6 minutes until internal temperature reaches 165 degrees.
  8. Step: For bone-in chicken: air fry skin side down for 10 minutes, brush with sauce and cook 5 minutes, flip, brush with sauce and cook 5 minutes, then increase heat to 400 degrees and air fry 2-4 minutes until skin is crispy and temperature reaches 165 degrees.
  9. Step: Rest the chicken for 5 minutes and serve with additional sauce if desired.

Notes

Cooking time will vary by size of chicken pieces. Brush sauce on during the last 5 minutes to prevent burning. Do not marinate longer than 24 hours to avoid mushy meat. Cook to internal temperature of 165-195 degrees for best results.
