- 8 bone-in, skin-on chicken thighs
- 4 tbsp unsalted butter
- 2 tbsp olive oil
- 6 large cloves garlic, minced
- 1/2 cup freshly grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- 1/4 tsp red pepper flakes
- 1/4 cup fresh parsley, chopped
- kosher salt, to taste
- freshly ground black pepper, to taste
Instructions
- Step 1: Preheat oven to 400°F (200°C), pat chicken thighs dry with paper towels, and season both sides with salt and pepper.
- Step 2: Heat olive oil and 2 tablespoons of butter in an oven-safe skillet over medium-high heat; sear chicken skin-side down for 6-8 minutes.
- Step 3: Combine grated Parmesan, Italian seasoning, paprika, and red pepper flakes in a small bowl.
- Step 4: Flip the chicken, sear the other side for 2-3 minutes, then remove chicken from the skillet and set aside.
- Step 5: Reduce heat to medium-low, melt remaining 2 tablespoons of butter, and cook minced garlic for 60 seconds.
- Step 6: Return chicken to the skillet skin-side up, spoon garlic butter over each piece, and sprinkle with the Parmesan mixture.
- Step 7: Bake in the oven for 15-18 minutes or until the internal temperature reaches 165°F.
- Step 8: Let chicken rest for 5 minutes and sprinkle with fresh chopped parsley before serving.
Notes
Freshly grated Parmesan melts better than pre-shredded. Bring chicken to room temperature before cooking for even results. Pat skin thoroughly dry to ensure maximum crispiness.
