Description

Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 6 large cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/4 tsp red pepper flakes
  • 1/4 cup fresh parsley, chopped
  • kosher salt, to taste
  • freshly ground black pepper, to taste

Instructions

  1. Step 1: Preheat oven to 400°F (200°C), pat chicken thighs dry with paper towels, and season both sides with salt and pepper.
  2. Step 2: Heat olive oil and 2 tablespoons of butter in an oven-safe skillet over medium-high heat; sear chicken skin-side down for 6-8 minutes.
  3. Step 3: Combine grated Parmesan, Italian seasoning, paprika, and red pepper flakes in a small bowl.
  4. Step 4: Flip the chicken, sear the other side for 2-3 minutes, then remove chicken from the skillet and set aside.
  5. Step 5: Reduce heat to medium-low, melt remaining 2 tablespoons of butter, and cook minced garlic for 60 seconds.
  6. Step 6: Return chicken to the skillet skin-side up, spoon garlic butter over each piece, and sprinkle with the Parmesan mixture.
  7. Step 7: Bake in the oven for 15-18 minutes or until the internal temperature reaches 165°F.
  8. Step 8: Let chicken rest for 5 minutes and sprinkle with fresh chopped parsley before serving.

Notes

Freshly grated Parmesan melts better than pre-shredded. Bring chicken to room temperature before cooking for even results. Pat skin thoroughly dry to ensure maximum crispiness.
