  • 3 Pounds Chicken Wings (tips removed, drumettes and flats separated)
  • 1 1/2 Tablespoons Baking Powder
  • 1 Teaspoon Kosher Salt
  • 1/2 Teaspoon Freshly Ground Black Pepper
  • 6 Tablespoons Unsalted Butter
  • 6 Cloves Garlic (minced)
  • 1/2 Teaspoon Kosher Salt
  • 1/2 Teaspoon Black Pepper
  • 1/2 Cup Parmesan (freshly grated, divided)
  • 4 Teaspoons Lemon Zest
  • 2 Tablespoons Fresh Parsley (chopped)

Instructions

  1. Prep: Preheat oven to 425 F and line a rimmed baking sheet with parchment paper and an oven-safe wire rack. Pat dry the wings in paper towels and place in a large bowl.
  2. Coat wings: Combine baking powder, salt, and black pepper in a small bowl. Toss the wings until fully and evenly coated.
  3. Bake: Spread wings onto the prepared baking sheet in a single layer and bake for 45-50 minutes.
  4. Sauce: Melt butter over medium heat in a small saute pan. Add minced garlic and toast until fragrant (1-2 minutes). Remove from heat and stir in black pepper, salt, half the parmesan, and lemon zest.
  5. Serve: Toss baked wings in a bowl with the sauce to evenly coat. Transfer to a platter and sprinkle with remaining parmesan and parsley.
