Ingredients

  • 1.5 pounds chicken breast (butterflied)
  • 2 cups panko bread crumbs
  • 1 egg
  • 1/2 cup Kodiak Cakes Flapjack Mix
  • 1/2 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp pepper
  • 3/4 tsp paprika
  • 1/4 cup parmesan cheese

Instructions

  1. Step 1: Preheat Air Fryer to 390F and spray roasting pan with olive oil spray.
  2. Step 2: Trim chicken breast of excess fat and butterfly or pound to no thicker than 1/4 inch.
  3. Step 3: Divide breadcrumbs and Kodiak cake mix into two bowls; season both evenly with spices and add parmesan cheese to the breadcrumb bowl. Scramble egg in a third bowl.
  4. Step 4: Dredge chicken in pancake mix, dip into eggs, and coat with breadcrumb mix on all sides.
  5. Step 5: Place chicken in air fryer basket and cook at 390F for 4 minutes, flip, and cook for another 2-4 minutes until internal temperature reaches 165F.
