- 1.5 pounds chicken breast (butterflied)
- 2 cups panko bread crumbs
- 1 egg
- 1/2 cup Kodiak Cakes Flapjack Mix
- 1/2 tsp salt
- 1/2 tsp onion powder
- 1/2 tsp pepper
- 3/4 tsp paprika
- 1/4 cup parmesan cheese
Instructions
- Step 1: Preheat Air Fryer to 390F and spray roasting pan with olive oil spray.
- Step 2: Trim chicken breast of excess fat and butterfly or pound to no thicker than 1/4 inch.
- Step 3: Divide breadcrumbs and Kodiak cake mix into two bowls; season both evenly with spices and add parmesan cheese to the breadcrumb bowl. Scramble egg in a third bowl.
- Step 4: Dredge chicken in pancake mix, dip into eggs, and coat with breadcrumb mix on all sides.
- Step 5: Place chicken in air fryer basket and cook at 390F for 4 minutes, flip, and cook for another 2-4 minutes until internal temperature reaches 165F.
Notes
Air fryer temperatures vary; adjust time and temperature to your specific model. Cook in a single layer with space between pieces for maximum crispiness. Using coconut oil spray is recommended over traditional cooking spray. Ensure chicken is dry before breading to help the coating stick.
