  • 12 ounces Linguine or spaghetti
  • 1 pound Large shrimp, peeled and deveined
  • 3 tablespoons Olive oil
  • 4 tablespoons Unsalted butter
  • 5 cloves Garlic, minced
  • 0.25 teaspoon Crushed red pepper flakes
  • 0.5 cup Chicken broth
  • 2 tablespoons Lemon juice
  • 1 teaspoon Lemon zest
  • 0.5 cup Parmesan cheese, grated
  • 1 cup Mozzarella cheese, shredded
  • 0.25 cup Fresh parsley, chopped
  • Salt and Black Pepper to taste

Instructions

  1. Cook Pasta: Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes. Drain and toss with a little olive oil.
  2. Sauté Shrimp: Heat 3 tablespoons olive oil and 2 tablespoons butter in a skillet over medium heat. Season shrimp with salt and pepper, sauté until pink and opaque, about 1-2 minutes per side. Remove and set aside.
  3. Make Garlic Butter Sauce: In the same skillet, melt remaining 2 tablespoons butter. Add minced garlic and red pepper flakes, sautéing until fragrant. Stir in chicken broth and lemon juice, simmering for 2-3 minutes to reduce slightly.
  4. Combine: Add cooked pasta and shrimp to the skillet. Stir in half of the mozzarella and Parmesan cheese until melted and well combined.
  5. Bake: Preheat oven to 375°F. Transfer mixture to a greased baking dish, top with the remaining cheeses, and bake for 15 minutes until bubbling and golden.
  6. Serve: Garnish with fresh parsley and serve hot.

Notes

This recipe is make-ahead and freezer-friendly. Store leftovers in an airtight container for up to 3 days. Reheat in the oven at 350°F.
