Easy Chicken Thighs and Rice Casserole Recipe – super delicious Rice Casserole Recipe with Baked Chicken Thighs, garlic and smoky turkey bacon flavor.

- 5 strips smoked turkey bacon, chopped into tiny pieces
- 2 tablespoons butter or oil, plus more for brushing chicken
- 1 medium onion, chopped
- 3 cloves garlic, finely chopped
- 5 chicken thighs, skinless and boneless
- 1 1/2 cups jasmine rice, uncooked and rinsed
- 4 cups homemade chicken broth
- 1 1/2 tablespoons meat seasoning
- 1 teaspoon smoked paprika
- sea salt and pepper, to taste
Instructions
- Preheat: Preheat the oven to 400F and grease 9 by 13″ casserole dish.
- Saute Bacon: Using a skillet, add 5 chopped smoked turkey bacon strips and saute until golden color about 5 minutes.
- Saute Aromatics: Remove bacon grease leaving about 1 tablespoon inside the skillet, add 1 tablespoon butter and 1 chopped onion; saute until onion is soft about 9 minutes.
- Add Garlic: Add 3 finely chopped garlic cloves and saute for 1 minute.
- Combine Rice: Place 1 1/2 cup of rice and the sauteed onion and bacon mixture into a casserole dish.
- Season Chicken: Mix all spices together; rub half of the spice mixture onto both sides of the chicken thighs and add the rest of the spice mixture to the casserole.
- Add Broth: Pour in 4 cups of homemade chicken broth and stir the rice and broth.
- Bake Covered: Place chicken on top of the rice, cover the casserole and bake for 45 minutes.
- Bake Uncovered: Uncover and bake for 15-20 more minutes, or until water evaporates.
- Garnish: Sprinkle with freshly chopped parsley and enjoy!
Notes
If using chicken breasts, use thick cuts to prevent overcooking. Leftovers can be stored in an airtight container for up to 3 days.
