Description

Easy Chicken Thighs and Rice Casserole Recipe – super delicious Rice Casserole Recipe with Baked Chicken Thighs, garlic and smoky turkey bacon flavor.


Ingredients

  • 5 strips smoked turkey bacon, chopped into tiny pieces
  • 2 tablespoons butter or oil, plus more for brushing chicken
  • 1 medium onion, chopped
  • 3 cloves garlic, finely chopped
  • 5 chicken thighs, skinless and boneless
  • 1 1/2 cups jasmine rice, uncooked and rinsed
  • 4 cups homemade chicken broth
  • 1 1/2 tablespoons meat seasoning
  • 1 teaspoon smoked paprika
  • sea salt and pepper, to taste

Instructions

  1. Preheat: Preheat the oven to 400F and grease 9 by 13″ casserole dish.
  2. Saute Bacon: Using a skillet, add 5 chopped smoked turkey bacon strips and saute until golden color about 5 minutes.
  3. Saute Aromatics: Remove bacon grease leaving about 1 tablespoon inside the skillet, add 1 tablespoon butter and 1 chopped onion; saute until onion is soft about 9 minutes.
  4. Add Garlic: Add 3 finely chopped garlic cloves and saute for 1 minute.
  5. Combine Rice: Place 1 1/2 cup of rice and the sauteed onion and bacon mixture into a casserole dish.
  6. Season Chicken: Mix all spices together; rub half of the spice mixture onto both sides of the chicken thighs and add the rest of the spice mixture to the casserole.
  7. Add Broth: Pour in 4 cups of homemade chicken broth and stir the rice and broth.
  8. Bake Covered: Place chicken on top of the rice, cover the casserole and bake for 45 minutes.
  9. Bake Uncovered: Uncover and bake for 15-20 more minutes, or until water evaporates.
  10. Garnish: Sprinkle with freshly chopped parsley and enjoy!

Notes

If using chicken breasts, use thick cuts to prevent overcooking. Leftovers can be stored in an airtight container for up to 3 days.
