- 1 medium onion, finely diced
- 1 pound ground beef
- 3 cloves garlic, minced
- 1 teaspoon red pepper flakes
- 1 teaspoon dried oregano
- 2 tablespoons tomato paste
- 1 jar tomato basil pasta sauce
- 1 can diced tomatoes
- 4 cups chicken broth
- 1 teaspoon kosher salt
- 6 sheets dried lasagna noodles
- 1 cup heavy cream
Instructions
- Step: Sauté onion in olive oil over medium heat until soft, about 3-5 minutes.
- Step: Brown the ground beef, breaking it apart until no pink remains.
- Step: Stir in garlic, red pepper flakes, oregano, and tomato paste. Cook for 30-60 seconds until fragrant.
- Step: Pour in pasta sauce, diced tomatoes, and chicken broth. Bring to a rolling boil.
- Step: Add broken lasagna noodles and 1 tsp salt. Simmer until pasta is tender, about 10-15 minutes.
- Step: Stir in heavy cream for ultimate creaminess, and adjust thickness with extra broth if needed.
Notes
Store cooled soup in an airtight container for up to 3 days. For freezing, store soup base without noodles or cream for up to 3 months.
