- 2–3 lbs beef chuck roast
- 1 large yellow or white onion, chopped
- 4 cloves garlic, minced
- 2 tbsp taco seasoning
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 cup low-sodium beef broth
- 2 tbsp fresh lime juice
- 12 corn or flour tortillas
- 1/2 cup fresh cilantro, chopped
- 1/2 cup red onion, diced
- 1/2 cup crumbled cotija cheese
- 1/2 cup sour cream
- 1 large avocado, sliced
- 1/2 cup salsa
- 1/4 cup pickled red onions
Instructions
- Step: Trim any large, excess fat from the chuck roast and cut it into 2-3 large chunks.
- Step: Pat the beef pieces dry with paper towels.
- Step: In a small bowl, combine taco seasoning, chili powder, cumin, and smoked paprika.
- Step: Rub the spice mixture all over the beef chunks, ensuring they are well coated.
- Step: Place the seasoned beef chunks into the bottom of the slow cooker.
- Step: Scatter the chopped onion and minced garlic evenly around and over the beef.
- Step: Pour the beef broth over the beef and aromatics, ensuring the liquid comes up halfway to two-thirds of the way up the beef.
- Step: Cover the slow cooker with the lid and set it to the ‘Low’ setting. Cook for 6-8 hours until the beef is tender.
- Step: Once cooked, remove the chunks from the slow cooker and place them in a large bowl.
- Step: Using two forks, shred the beef into small, taco-friendly pieces.
- Step: Skim any excess fat from the cooking liquid in the slow cooker and return the shredded beef to the slow cooker.
- Step: Toss the beef with the cooking liquid and stir in the fresh lime juice.
- Step: Keep the shredded beef on the ‘Warm’ setting until ready to serve.
- Step: Warm the tortillas and set out your favorite taco toppings for everyone to build their own tacos.
Notes
Optional: Sear the beef chunks in a hot pan with a little oil before adding them to the crock pot for extra flavor. Adjust spice levels by adding cayenne pepper or jalapeños for heat. Always warm tortillas before serving for the best texture.
