- 1.5 lbs boneless, skinless chicken breasts or thighs
- 1 cup chunky salsa
- 1 packet taco seasoning
- 0.25 cup chicken broth or water
- 2 tbsp fresh lime juice
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 0.5 tsp smoked paprika

Instructions
- Step 1: Place the chicken in the bottom of your slow cooker.
- Step 2: Stir together the salsa, taco seasoning, chicken broth, lime juice, minced garlic, cumin, and smoked paprika, then pour evenly over the chicken.
- Step 3: Secure the lid and cook on LOW for 4-6 hours or HIGH for 2-4 hours until the chicken shreds easily.
- Step 4: Use two forks to shred the chicken directly in the slow cooker and stir.
- Step 5: Leave the lid off and let the chicken sit on the WARM setting for 15-20 minutes to thicken.
- Step 6: Warm your tortillas in a skillet, over a flame, or in the microwave.
- Step 7: Pile the chicken into the tortillas and add your favorite toppings.

Store in an airtight container for 3-4 days or freeze for up to 3 months. Reheat gently on the stovetop with a splash of broth to maintain moisture.
