- 8 bone-in, skin-on chicken thighs
- 2 tablespoons garlic, minced
- 8 tablespoons unsalted butter, room temperature
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 tablespoon tarragon, crushed
- 1 tablespoon sage
- 1 tablespoon basil
- 1 tablespoon Italian seasoning
Instructions
- Step: Preheat oven to 425°F.
- Step: Rinse chicken thighs under cold water and place on a rack on top of a rimmed baking sheet. Pat thighs dry with a paper towel.
- Step: Gently separate the skin from the thigh to create a pocket, keeping the skin attached at the corners.
- Step: In a small bowl, combine the butter, salt, pepper, garlic, and herbs.
- Step: Spread the butter mixture under the skin of each thigh and rub the remaining mixture over the top of the skin.
- Step: Bake for 40-45 minutes, or until the internal temperature reaches 165°F and the juices run clear.
Notes
Use fresh garlic for the best flavor. Ensure chicken reaches an internal temperature of 165°F. Use a wire rack for crispier skin.
