- 1 lb ground beef (90% lean)
- 12–14 corn tortillas
- 1 small yellow onion (diced)
- 2 cloves garlic (minced)
- 2 cups red enchilada sauce
- 2 cups shredded cheese (Monterey Jack and Cheddar blend)
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp vegetable oil
Instructions
- Step: Preheat oven to 375°F and grease a 9×13 baking dish.
- Step: Sauté ground beef and onion in a skillet until beef is browned.
- Step: Drain grease and stir in garlic, chili powder, cumin, salt, and pepper.
- Step: Mix 1/2 cup of enchilada sauce into the beef filling.
- Step: Spread 1/2 cup of sauce over the bottom of the baking dish.
- Step: Warm tortillas in the microwave for 30 seconds until soft.
- Step: Dip each tortilla in sauce, fill with beef and cheese, and roll tightly.
- Step: Place rolls seam-side down in the dish.
- Step: Top with remaining sauce and cheese.
- Step: Bake for 20 minutes until the cheese is bubbly and golden.
Notes
Warm your tortillas before rolling to prevent cracking. Placing the enchiladas seam-side down keeps them from unrolling during the baking process.
