- 1 Onion (chopped)
- 2 cloves Garlic (minced)
- 2 tbsp Chili powder
- 1 tsp Cumin
- 1 can Diced tomatoes
- 1 cup Enchilada sauce
- 1 cup Chicken broth
- 8 pieces Corn tortillas
- 2 cups Shredded cheese
- 1 cup Sour cream (for serving)
Instructions
- Step: Preheat the oven.
- Step: In a skillet, cook the ground beef until browned. Drain excess fat.
- Step: Add chopped onion and minced garlic to the beef and sauté until soft.
- Step: Stir in chili powder, cumin, diced tomatoes, and chicken broth. Simmer for a few minutes.
- Step: Warm corn tortillas to prevent cracking.
- Step: Fill each tortilla with the beef mixture, roll them up, and place them seam side down in a baking dish.
- Step: Pour enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
- Step: Bake in the oven until cheese is melted and bubbly.
- Step: Serve hot, with sour cream if desired.
