Description
This Easy Homemade French Onion Soup is full of sweet and delicious caramelized onions in a rich, flavorful broth topped with toasted bread and lots of melted cheese.

- 4 tablespoons butter
- 6 cups thinly sliced onions
- 1 clove garlic, minced
- 2 tablespoons all-purpose flour
- ½ cup white grape juice or diluted apple cider vinegar
- 4 cups beef stock
- ¼ teaspoon dried thyme
- salt and pepper, to taste
- 4 to 8 slices crusty bread
- ½ cup shredded mozzarella cheese
- ½ cup shredded Gruyere cheese
Instructions
- Step: Melt the butter in a large pot over low heat.
- Step: Add the thinly sliced onions and cook, uncovered, stirring often, for 30 to 45 minutes or until caramelized.
- Step: Add the garlic and cook, stirring for one minute.
- Step: Add the white grape juice or diluted apple cider vinegar and deglaze the pan, simmering until mostly evaporated.
- Step: Add the flour and cook, stirring, for one minute.
- Step: Add the beef stock and thyme; stir, bring to a boil, then simmer for 10 minutes.
- Step: Taste and season with salt and pepper as needed.
- Step: Preheat the broiler and position the oven rack in the middle.
- Step: Toast the bread slices.
- Step: Ladle the soup into 4 oven-safe bowls.
- Step: Top each bowl with 1 or 2 slices of bread.
- Step: Sprinkle each with 2 tablespoons of mozzarella and 2 tablespoons of Gruyere cheese.
- Step: Broil until the cheese is melted.
Notes
You can use any type of onions; a combination of white and red onions provides a nice balance. If oven-safe bowls are unavailable, broil the cheesy bread on a baking sheet and place it on top of the soup. Swiss cheese can be used as a substitute for Gruyere.
