Ingredients
Scale
- 1 ½ cups cold water
- ½ cup low sodium soy sauce
- ⅓ cup light brown sugar
- 3 tablespoons cornstarch
- 1 tablespoon rice vinegar
- 1 ½ teaspoons ginger root, freshly grated
- 2 pounds lean ground beef
- ⅔ cup panko bread crumbs
- ¼ cup sweet yellow onion, finely diced
- 2 extra-large eggs
- 3 tablespoons whole milk
- 1 teaspoon kosher salt
- ½ teaspoon fresh cracked black pepper
- ½ teaspoon ginger root, freshly grated
- 1 tablespoon extra virgin olive oil
- 2 tablespoons green onions, thinly sliced
- 1 tablespoon toasted sesame seeds
Instructions
- Step: In a 3 to 4 quart saucepan over medium high heat, whisk in the water, low sodium soy sauce, light brown sugar, cornstarch, rice vinegar and fresh grated ginger.
- Step: Continue whisking constantly until the sauce thickens to a gravy consistency, then remove from heat.
- Step: Line a baking sheet with parchment paper and add the ground beef to a large mixing bowl.
- Step: Mix in the panko bread crumbs, onion, eggs, whole milk, kosher salt, cracked black pepper and ground ginger until completely combined.
- Step: Use a 1 ½ tablespoon scoop to form round meatballs and place them on the lined baking sheet.
- Step: In a 10 to 12 inch nonstick skillet over medium high heat, add the olive oil and brown the meatballs on all sides for about 7 to 8 minutes.
- Step: Reduce the heat to medium, spoon the teriyaki sauce over the meatballs, and simmer for 8 to 10 minutes until the internal temperature reaches 160°F.
- Step: Garnish with the thinly sliced green onions and toasted sesame seeds.
Notes
Ground ginger can be substituted for the freshly grated ginger. Regular soy sauce can be substituted for the low sodium soy sauce, though it will be saltier.
