Description

This Instant Pot Chicken and Dumplings is an easy one-pot comfort food meal that can be ready in 30 minutes by using your Instant Pot.


Ingredients

  • 1 Tablespoon oil
  • 1/2 large onion, chopped
  • 2 stalks celery, chopped
  • 1 cup carrots, chopped
  • 1 tablespoons minced garlic
  • 1 pound boneless, skinless chicken thighs or chicken breasts, diced into 1” pieces
  • 4 cups low sodium chicken broth
  • 1/2 teaspoon black pepper
  • 2 teaspoons poultry seasoning
  • 2 teaspoons Italian seasoning
  • Salt to taste
  • 5 refrigerated canned biscuits, each cut into 8 pieces
  • 1 cup frozen peas
  • 1/2 cup heavy cream
  • 2 Tablespoons cornstarch
  • 1/4 cup cold water
  • 2 Tablespoons chopped fresh parsley or cilantro

Instructions

  1. Step: Press the SAUTE button on the Instant Pot, add oil, and sauté the onions for 4 to 5 minutes.
  2. Step: Add celery, carrots, and garlic; stir well.
  3. Step: Add chicken and cook with the vegetables for 5 minutes.
  4. Step: Stir in chicken broth, black pepper, poultry seasoning, salt, and Italian seasoning.
  5. Step: Slice the 5 refrigerated biscuits into 8 pieces each and drop them into the pot.
  6. Step: Close the lid, set to high pressure for 7 minutes, and allow for a natural pressure release for 10 minutes.
  7. Step: Carefully remove the lid, stir in the peas and heavy cream, and thicken with the cornstarch and water mixture if desired. Garnish with parsley or cilantro.

Notes

If doubling the recipe, do not increase the pressure cook time. If using homemade dumplings, mix 1.5 cups flour, 0.5 tsp salt, 1 tsp baking soda, 2 tsp baking powder, 3 tbsp butter, and 0.75 cup milk; drop teaspoonfuls into the broth after adding chicken.
