- 1 pound ground beef or turkey
- 1 onion, diced
- 4 cups chicken or vegetable broth
- 2 cups marinara sauce
- 8 ounces lasagna noodles, broken into pieces
- 1 cup shredded mozzarella cheese
- 1/2 cup ricotta cheese (optional)
- Fresh basil or parsley for garnish (optional)
Instructions
- Step: In a large pot over medium heat, add the ground beef or turkey. Cook until browned, breaking it apart with a spoon.
- Step: Add the diced onion to the pot. Cook until the onion is translucent, about 3-4 minutes.
- Step: Pour in the chicken or vegetable broth and marinara sauce. Stir well to combine.
- Step: Increase the heat and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 10 minutes.
- Step: Add the broken lasagna noodles to the pot. Allow them to cook in the broth for about 10-12 minutes, or until tender.
- Step: Stir in the shredded mozzarella cheese until melted and combined. If using ricotta, dollop it into the soup at this point.
- Step: Taste the soup and add salt and pepper as needed. Feel free to add Italian seasoning for extra flavor.
- Step: Serve hot, garnished with fresh basil or parsley if desired.
Notes
Leftover soup can be repurposed into a pasta casserole. Store in the refrigerator for 3-4 days or freeze for up to 3 months.
