  • 4 cups cooked, shredded chicken
  • 1 15-ounce can black beans, drained and rinsed
  • 1 15.25-ounce can whole kernel corn, drained
  • 1 14.5-ounce can fire-roasted diced tomatoes
  • 1 4-ounce can diced green chilies
  • 3 cups crushed tortilla chips, divided
  • 2 cups shredded Mexican cheese blend, divided

Instructions

  1. Step: Preheat oven to 350° Fahrenheit and lightly spray a 9×13 casserole dish with neutral cooking spray.
  2. Step: In a large mixing bowl, stir together the cheddar soup, sour cream, garlic powder, cumin, chili powder, salt, and black pepper until fully incorporated.
  3. Step: Add the shredded chicken, black beans, corn, fire-roasted tomatoes, and green chilies to the bowl, stirring until well coated.
  4. Step: Line the bottom of the casserole dish with 1 ½ cups of tortilla chips in an even layer.
  5. Step: Spread half of the chicken mixture over the chips, followed by 1 cup of the shredded Mexican cheese.
  6. Step: Add the remaining 1 ½ cups of tortilla chips, the remaining chicken mixture, and top with the remaining 1 cup of cheese.
  7. Step: Bake uncovered for 20 minutes, then continue baking until the cheese is melted and bubbly.
  8. Step: Remove from the oven and let rest for 5 to 10 minutes before serving.
