Easy Mexican Shrimp Cocktail bursting with the delicious flavors of jalapeño, tomatoes, avocados, lime, and a vibrant zesty cocktail sauce. Perfect as a refreshing starter for celebrations.

- 1 lb large raw shrimp, peeled and deveined
- 1 cup ripe tomatoes, chopped
- 1 cup cucumber, finely chopped
- 2 tablespoons jalapeno, seeded and finely chopped
- 1/2 cup red onion, finely chopped
- 1 1/2 cup tomato & clam juice cocktail (store-bought or homemade)
- 1/2 cup ketchup
- 1/4 cup freshly squeezed lime juice
- 2 tablespoons fresh cilantro + more for serving, chopped
- Hot sauce, to taste
- 1 large ripe avocado, chopped
- 1 cup tomato juice (unsweetened)
- 1/2 cup clam juice
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon Tabasco sauce
- 1 tablespoon lemon juice
- 1/4 teaspoon onion powder
- 1/4 teaspoon black pepper
Instructions
- Step: Combine tomato juice, clam juice, Worcestershire, Tabasco, lemon juice, onion powder, and black pepper in a jar and mix well.
- Step: Bring a pot of salted water to a boil, add shrimp, and cook for 2-3 minutes until pink.
- Step: Transfer shrimp to a plate to cool; reserve 5-7 whole shrimp for garnish and chop the rest into bite-size pieces.
- Step: In a bowl, whisk together the tomato & clam juice cocktail, ketchup, lime juice, cilantro, and hot sauce.
- Step: Add the chopped shrimp, tomatoes, cucumber, jalapeno, and red onion to the bowl and mix well.
- Step: Cover and refrigerate for 1 to 3 hours to chill.
- Step: Gently stir in the chopped avocado just before serving, and garnish with reserved shrimp and extra cilantro.
Notes
Thaw frozen raw shrimp in cold water or overnight in the fridge. For a crunchier texture, add 1/2 cup of finely chopped celery. Serve chilled with tortilla chips.
