Description

Sweet bell peppers are stuffed with a savory blend of ground beef, plant-based ground savory crumbles, rice, and fresh vegetables, then topped with melted cheese. This is a hearty, comfort food dish perfect for family dinners.

  • 6 large bell peppers, any color, tops removed and seeds cleared
  • 1 pound ground beef
  • 1 pound plant-based ground savory crumbles
  • 1 small white or yellow onion, diced small
  • 1 celery rib, diced small
  • 3 to 4 cloves garlic, minced
  • 1 1/2 cups marinara sauce
  • 1 cup reduced sodium beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon granulated sugar
  • 1 teaspoon all-purpose seasoning
  • 1/2 teaspoon dried oregano
  • 1 1/2 cups cooked rice
  • 1/2 cup finely grated Parmesan cheese
  • 1 cup shredded cheddar cheese, divided

Instructions

  1. Preheat: Set your oven to 350°F.
  2. Par-bake: Place the hollowed peppers cut-side down in a 9×13-inch baking dish with 1 cup of water. Cover with foil and bake for 20 minutes.
  3. Brown: In a large skillet, brown the ground beef and plant-based crumbles over medium-high heat. Add onions and celery, cooking until softened. Stir in garlic for 1 minute.
  4. Simmer: Add marinara sauce, broth, Worcestershire, sugar, and seasonings. Bring to a boil, then simmer uncovered for 15 minutes.
  5. Combine: Remove from heat and stir in the cooked rice and Parmesan cheese.
  6. Assemble: Discard the par-baking water from the dish. Turn the peppers cut-side up and fill each with the mixture.
  7. Bake: Cover with foil and bake for 25 minutes.
  8. Broil: Remove foil, top with shredded cheddar, and broil on high for 2 minutes until bubbly and golden.

Notes

Ensure you par-bake the peppers so they reach the desired tenderness. The filling can be made ahead of time and refrigerated for up to 4 days.
