Summer is ceviche season and we are obsessing over this easy shrimp ceviche. This dish is packed with fresh veggies, zesty lime, and tasty shrimp. Serve it as a main dish, an appetizer, or on top of tostada shells.

- 1 lb cooked shrimp, peeled and deveined
- 1 cup diced cucumber
- 1 cup diced tomatoes
- 1/2 cup red onion, finely chopped
- 1/2 cup fresh cilantro, chopped
- 1/2 cup fresh lime juice
- 1 jalapeño, seeded and minced
- 1 avocado, diced
- Salt and pepper to taste
Instructions
- Combine: In a large mixing bowl, toss the cooked shrimp with the lime juice and let sit for 10 minutes.
- Mix: Add the cucumber, tomatoes, red onion, cilantro, and jalapeño to the bowl.
- Season: Season the mixture with salt and pepper to taste.
- Serve: Gently fold in the diced avocado just before serving.

Ensure the shrimp is fully cooked and chilled before preparing the ceviche. Serve cold immediately for best texture.
