Description

Summer is ceviche season and we are obsessing over this easy shrimp ceviche. This dish is packed with fresh veggies, zesty lime, and tasty shrimp. Serve it as a main dish, an appetizer, or on top of tostada shells.


Ingredients

  • 1 lb cooked shrimp, peeled and deveined
  • 1 cup diced cucumber
  • 1 cup diced tomatoes
  • 1/2 cup red onion, finely chopped
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup fresh lime juice
  • 1 jalapeño, seeded and minced
  • 1 avocado, diced
  • Salt and pepper to taste

Instructions

  1. Combine: In a large mixing bowl, toss the cooked shrimp with the lime juice and let sit for 10 minutes.
  2. Mix: Add the cucumber, tomatoes, red onion, cilantro, and jalapeño to the bowl.
  3. Season: Season the mixture with salt and pepper to taste.
  4. Serve: Gently fold in the diced avocado just before serving.
