- 20 baguette slices
- 8 oz smoked salmon or lox
- 1 cup full-fat cream cheese
- 2 tbsp capers
- 2 tbsp fresh dill, finely chopped
- 2 spring onions, finely chopped
- 2 tsp freshly-squeezed lemon juice
- 2 tsp lemon zest
- 1 tsp flaky sea salt
- 1/2 tsp ground black pepper
- 3 tbsp olive oil
Instructions
- Step: Cut the baguettes into 1/2-inch slices and brush each slice on both sides with olive oil.
- Step: Grill the bread for a couple of minutes on each side, or bake at 360°F (180°C) for 10-12 minutes.
- Step: Chop the capers, dill, and spring onions.
- Step: Mix the cream cheese, capers, spring onions, dill, lemon juice, lemon zest, salt, and pepper in a bowl.
- Step: Spread the herb cream cheese mixture over the toasted baguette slices.
- Step: Top each crostini with a piece of smoked salmon.
- Step: Garnish with extra fresh dill and serve with lemon wedges if desired.
Notes
Ensure the cream cheese is at room temperature for easier mixing and spreading. The crostini are best assembled just before serving to maintain the crunch of the bread.
