  • 2 tbsp (30ml) Light Corn Syrup: Prevents sugar crystallization.
  • 1 tsp (5g) Instant Espresso Powder: Infuses robust coffee flavor.
  • 1 tsp (5ml) Vanilla Extract: Enhances the flavor profile.
  • ½ tsp (2.5g) Sea Salt: Balances sweetness and enhances flavors.
  • 120g (1/2 cup) Granulated Sugar: For the marshmallow swirl.
  • 60ml (1/4 cup) Water: For the marshmallow swirl.
  • 30ml (2 tbsp) Light Corn Syrup: Prevents crystallization in the swirl.
  • 1 tsp (2g) Agar-Agar Powder: Vegan binding agent for the swirl.
  • 1 tsp (5ml) Vanilla Extract: Adds vanilla flavor to the swirl.
  • Pinch of Salt: Balances sweetness in the swirl.
  • 1 tsp (5g) Cocoa Powder, for Dusting: Adds a finishing touch.
  • 1 tsp (5g) Crushed Espresso Beans, for Garnish: Intensifies espresso flavor.

Instructions

  1. Prepare Pan: Line a 20x20cm (8x8in) pan with parchment paper.
  2. Melt Chocolate & Butter: Combine chocolate and butter, melt on low heat, stir until smooth.
  3. Boil Base Ingredients: Add condensed milk, sugar, water, corn syrup, espresso, vanilla, and salt; boil for 5 minutes, stirring constantly.
  4. Pour & Spread Fudge: Pour into pan, spread evenly.
  5. Prepare Swirl Base: Combine sugar, water, and corn syrup for the swirl; boil.
  6. Incorporate Agar-Agar: Whisk in agar-agar, simmer for 2 minutes.
  7. Flavor & Cool Swirl: Remove from heat, stir in vanilla and salt; cool for 2 minutes.
  8. Whip Marshmallow: Beat mixture for 5 minutes until fluffy.
  9. Swirl Marshmallow: Drop spoonfuls onto fudge, swirl gently.
