- 1.5 pounds Chicken Thighs
- 1/4 cup Soy Sauce
- 2 tablespoons Honey
- 2 tablespoons Rice Vinegar
- 1–2 tablespoons Sriracha
- 2 tablespoons Cornstarch
- 2 teaspoons Sesame Oil
- 1 medium Red Bell Pepper
- 1 medium Yellow Bell Pepper
- 1 medium Onion
- 3 cloves Garlic
- 1 tablespoon Ginger
- 2 tablespoons Green Onions
- 1 tablespoon Sesame Seeds
- 2 cups Cooked Rice
Instructions
- Marinate the Chicken: In a large mixing bowl, combine the chicken thighs, soy sauce, honey, rice vinegar, sriracha, cornstarch, and sesame oil. Stir the mixture until all ingredients are well-coated and refrigerate for 30 minutes to 2 hours.
- Prepare the Sauce: Mix the remaining soy sauce, honey, rice vinegar, sriracha, and about ¼ cup of water in a separate bowl. Set aside.
- Cook the Chicken: Heat a large skillet over medium-high heat, adding a drizzle of olive oil. Add the marinated chicken and cook for 5 to 7 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Sauté the Vegetables: In the same skillet, add more olive oil if needed, followed by the onions, red and yellow bell peppers, garlic, and ginger. Sauté for about 5 to 7 minutes until tender-crisp.
- Combine Chicken and Sauce: Return the cooked chicken to the skillet with the sautéed vegetables. Pour the prepared sauce over the mixture and simmer on medium heat for about 3 to 5 minutes until the sauce thickens and glistens.
- Serve and Garnish: Spoon the fragrant mix over a bed of fluffy cooked rice. Garnish with chopped green onions and sesame seeds.
