Instructions
- Combine Dry Ingredients: Whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
- Prepare Wet Ingredients: Whisk together milk, eggs, melted butter, vanilla, and orange zest.
- Combine Wet & Dry: Gently mix wet and dry ingredients until just blended.
- Make Orange-Cream Cheese Swirl: Beat cream cheese, powdered sugar, marmalade, zest, and salt until smooth.
- Cook Pancakes: Heat a skillet over medium heat and lightly brush with butter.
- Pour & Swirl: Pour ¼ cup batter onto the skillet, top with 1 Tbsp swirl, and gently swirl.
- Flip & Finish: Cook 2-3 minutes per side, until golden brown.
- Prepare Maple-Smoke Glaze: Melt butter, stir in maple syrup and paprika (if using).
- Assemble & Serve: Stack pancakes, drizzle with glaze, sprinkle with almonds and zest.
Notes
For best results, don’t overmix the batter and use fresh baking powder. Resting the batter for 5-10 minutes can also improve texture.
