  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon grated ginger
  • Crushed red pepper flakes or sriracha

Instructions

  1. Step 1: Dice the chicken into bite-sized pieces and pat dry with a paper towel to ensure a good sear. Spiralize the zucchini using a spiralizer, or use pre-made zucchini noodles for convenience. Mince garlic and, if using, grate fresh ginger.
  2. Step 2: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced chicken and cook until golden brown and fully cooked, about 6-7 minutes. Remove the chicken from the pan and set it aside.
  3. Step 3: In the same skillet, add the remaining olive oil. Toss in the minced garlic and sauté for about 30 seconds until fragrant. Add the zucchini noodles and cook for 2-3 minutes, stirring occasionally. Be careful not to overcook the zoodles—they should be slightly tender but still have some crunch.
  4. Step 4: Return the cooked chicken to the skillet. Pour the sauce over the chicken and zoodles, tossing everything together until well-coated. Cook for an additional 1-2 minutes to heat through.
  5. Step 5: Serve immediately, garnished with sesame seeds or green onions if desired.

Notes

To avoid watery zoodles, pat them dry with a paper towel before cooking. Avoid overcooking the zucchini to keep them crisp-tender.
