Ingredients

  • ¼ cup vegetable oil (plus 1 tablespoon)
  • 10 ounces shrimp, peeled and deveined
  • 2 ounces ginger, minced
  • heads of garlic, minced (about ¼ cup)
  • 5 cups cooked white rice, cooled
  • 1 teaspoon soy sauce
  • 1 tablespoon alcohol-free ginger-infused broth
  • ⅛ teaspoon ground white pepper
  • 4 eggs, beaten
  • 3 scallions, finely chopped

Instructions

  1. Step: Heat your wok over high heat and add 1 tablespoon of oil. Quickly stir-fry the shrimp until pink and just cooked, then transfer to a bowl.
  2. Step: Add the remaining ¼ cup of oil to the wok over medium-high heat. Fry the minced ginger until fragrant, then add the garlic and cook for about 10 minutes until lightly toasted.
  3. Step: Turn the heat to high, add the cooled rice, and stir-fry until the ginger-garlic mixture is evenly distributed and the rice begins to toast.
  4. Step: Season with soy sauce, the alcohol-free ginger-infused broth, and white pepper, continuing to stir-fry for 3-5 minutes.
  5. Step: Pour the beaten eggs over the rice and stir-fry quickly until the eggs are cooked and evenly distributed.
  6. Step: Add the shrimp and scallions, stir-fry to combine, and serve immediately.

Notes

Use day-old refrigerated rice for the best texture. If you prefer, you can pre-scramble the eggs separately before folding them into the rice.
