Ingredients

  • 1/4 cup vegetable oil (plus 1 tablespoon)
  • 10 ounces shrimp, peeled and deveined
  • 2 ounces ginger, minced
  • 1 1/2 heads garlic, minced
  • 5 cups cooked white rice, cooled
  • 1 teaspoon soy sauce
  • 1 tablespoon rice vinegar (alcohol-free substitute)
  • 1/8 teaspoon ground white pepper
  • 4 eggs, beaten
  • 3 scallions, finely chopped

Instructions

  1. Step: Heat your wok over high heat. Add 1 tablespoon of oil to coat. Quickly stir-fry the shrimp until they are pink and just cooked. Transfer them to a bowl and set aside.
  2. Step: Add 1/4 cup oil to the wok and heat over medium-high heat. Add the ginger and fry until fragrant. Next, add the garlic and cook until lightly toasted, about 10 minutes total for the aromatics.
  3. Step: Turn the heat up to high and add the rice to the wok. Stir-fry the rice so the ginger and garlic are evenly distributed, spreading it out to toast the grains.
  4. Step: Season the rice with soy sauce, rice vinegar, and white pepper. Continue to stir-fry for another 3-5 minutes.
  5. Step: Pour the eggs evenly over the rice and stir-fry quickly to distribute and coat the grains.
  6. Step: Add the cooked shrimp and scallions, stir-fry to combine, and serve immediately.

Notes

Using day-old cooled rice ensures the best texture for fried rice. For a bolder flavor, serve with a dash of chili oil.
