Description

These oven baked chicken thighs are the ultimate comfort food, featuring incredibly crispy skin and juicy, tender meat. Simple to prepare and packed with savory flavor, they are a perfect weeknight dinner choice.

Ingredients

Scale
  • 46 chicken thighs (bone-in, skin-on)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: fresh herbs for garnish (parsley, thyme, etc.)

Instructions

  1. Preheat the Oven: Begin by preheating your oven to 425°F (220°C).
  2. Prepare the Baking Dish: Lightly grease a large baking dish or rimmed baking sheet with a little olive oil or cooking spray.
  3. Pat the Chicken Dry: Rinse the chicken thighs under cold water and pat them dry with paper towels. This helps achieve a crispier skin.
  4. Season the Chicken: In a bowl, mix together the olive oil, garlic powder, onion powder, paprika, oregano, salt, and pepper. Rub this mixture generously all over the chicken thighs, making sure to get under the skin as well.
  5. Place in Baking Dish: Arrange the seasoned chicken thighs skin-side up in the prepared baking dish. Ensure there is space between each piece to allow for even cooking.
  6. Bake: Place the dish in the preheated oven and bake for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy.
  7. Broil for Extra Crisp: For an extra crispy skin, switch the oven to broil for the final 2-3 minutes of cooking, keeping a close eye to prevent burning.
  8. Rest the Chicken: Once cooked, remove the chicken thighs from the oven and let them rest for 5-10 minutes before serving. This allows the juices to redistribute, enhancing the tenderness.
  9. Garnish and Serve: Optionally, garnish with fresh herbs before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4-5 days. For freezing, wrap completely cooled chicken tightly in plastic wrap and then foil; store for up to 3 months.
