Description

This hearty Gordon Ramsay Shepherd’s Pie recipe features a savory lamb or beef filling topped with a creamy, burnished mashed potato swirl, perfect for a comforting family dinner.

Ingredients

Scale
  • 1.5 lbs ground lamb or beef (for a leaner choice, use ground turkey)
  • 2 medium carrots, finely diced (about 1 cup)
  • 2 stalks celery, finely diced (about 1 cup)
  • 1 medium yellow onion, finely diced (about 1.5 cups)
  • 2 tablespoons tomato paste
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
  • 2 cups low-sodium beef broth (vegetable broth can be used)
  • 2 lbs Russet or Yukon Gold potatoes, peeled and diced
  • 4 tablespoons unsalted butter
  • 0.5 cup warm milk or heavy cream
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare Vegetables: Finely dice carrots, celery, and onion.
  2. Brown Meat: In a large 10-inch oven-safe skillet, brown ground lamb or beef over medium-high heat for 8-10 minutes until no pink remains, then drain excess fat.
  3. Sauté Aromatics and Herbs: Add diced carrots, celery, and onion to the skillet; cook for 5-7 minutes until softened. Stir in tomato paste and fresh herbs, cooking for 1 minute until fragrant.
  4. Simmer Meat Filling: Pour in beef broth, scraping up browned bits. Bring to a simmer and cook for 10-15 minutes until sauce thickens. Season with salt and pepper.
  5. Boil Potatoes: While filling simmers, boil peeled and diced potatoes in salted water for 15-20 minutes until fork-tender. Drain well and return to the pot over low heat for 1 minute to dry.
  6. Prepare Mashed Potatoes: Add butter, warm milk, salt, and pepper to the dried potatoes. Mash until smooth and fluffy, avoiding overmixing.
  7. Preheat Oven and Assemble: Preheat oven to 375F (190C). Spoon meat filling into a 9×13 inch baking dish. Spread mashed potatoes over top, creating swirls with a fork or piping bag.
  8. Bake Pie: Bake for 20-25 minutes until bubbling. Increase oven to 400F (200C) for 5-10 minutes, watching closely until the top is golden brown and burnished. (Use broiler if needed for browning).

Notes

To avoid common mistakes, do not overcrowd the pan when browning meat, ensure the filling is sufficiently reduced to prevent a watery sauce, and thoroughly drain potatoes to avoid a runny mash.
