Ingredients

  • 2 pounds boneless skinless chicken thighs, cubed
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 small red onion, cut into wedges
  • 0.25 cup soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 3 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated
  • 0.5 teaspoon black pepper

Instructions

  1. Step: Whisk soy sauce, olive oil, honey, lime juice, garlic, ginger, and black pepper. Add chicken and marinate at least 30 minutes.
  2. Step: Preheat grill to 400 to 425 degrees Fahrenheit and oil grates.
  3. Step: Thread chicken, pineapple, peppers, and onion onto skewers.
  4. Step: Grill 10 to 14 minutes, turning every few minutes, until chicken reaches 165 degrees Fahrenheit.
  5. Step: Rest 3 to 5 minutes before serving.

Notes

Use fresh pineapple for better caramelization. If using wooden skewers, soak them in water to prevent burning. Do not overcrowd the skewers to ensure even cooking.
