Description

Smoky grilled chicken skewers recipe, marinated in ginger, garlic, coconut cream and soy sauce. Then finished with a sweet coconut cream glaze and served with a simple peanut sauce. Big on flavor, super easy to throw together!


Ingredients

  • 1 kg chicken, preferably dark meat
  • 45 slices ginger, approx. 2 tablespoons
  • 2 cloves garlic, approx. 1½ tablespoons
  • 2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 2 tablespoons coconut cream
  • 2 tablespoons sugar
  • 1 tablespoon soy-based umami seasoning
  • 6 tablespoons coconut cream
  • 1 1/2 tablespoons honey
  • 1 teaspoon soy sauce
  • 2 tablespoons coconut cream
  • 1/4 cup natural peanut butter, unsweetened
  • 1 teaspoon rice vinegar
  • 1 teaspoon Thai red curry paste
  • 2 teaspoon maple syrup
  • 2 teaspoon soy sauce
  • 23 tablespoons water
  • 1 teaspoon sesame oil
  • 1 teaspoon chili oil
  • crushed peanuts

Instructions

  1. Step: In a small bowl, combine all the ingredients for the peanut sauce and mix well. Set aside.
  2. Step: Soak wooden skewers in water to prevent burning.
  3. Step: Cut chicken into 1-inch chunks.
  4. Step: Finely chop garlic and ginger, then combine with chicken and remaining marinade ingredients in a bowl.
  5. Step: Marinate in the refrigerator for 1-2 hours or overnight.
  6. Step: Thread chicken onto skewers, ensuring pieces are snug.
  7. Step: Whisk together coconut cream, honey, and soy sauce for the glaze in a small bowl.
  8. Step: Preheat grill to 500°F (260°C).
  9. Step: Grill skewers over direct heat for 15-18 minutes, flipping every 2-3 minutes.
  10. Step: Brush with glaze during the final 2-3 minutes of grilling to caramelize.

Notes

Use dark meat for juiciness. If substituting coconut cream with coconut milk, use full-fat varieties. Chicken can be brined if using breast meat to ensure moisture.
