Description
A quick and flavorful Ground Beef and Broccoli Stir Fry featuring tender ground beef, fresh broccoli florets, and a savory soy-ginger sauce. This easy skillet dish combines lean protein with healthy veggies, perfect for a nutritious weeknight dinner served over rice or cauliflower rice.
Ingredients
Scale
- ½ cup reduced sodium soy sauce
- 1 tablespoon honey
- 4 cloves garlic, minced
- 1-inch piece fresh ginger, peeled and grated
- 1 tablespoon cornstarch
- ½ tablespoon sesame oil
- 1 pound ground beef (93% lean)
- ½ medium yellow onion, chopped
- 1 large head broccoli, cut into florets and blanched
- 1 tablespoon toasted sesame seeds
- 3 medium scallions, sliced on the bias
- Cooked rice or cauliflower rice, for serving
Instructions
- Step: In a small bowl, whisk together the reduced sodium soy sauce, honey, minced garlic, grated ginger, and cornstarch until smooth. Set aside to allow the flavors to meld.
- Step: Heat sesame oil in a large deep skillet over medium-high heat. Add the ground beef and chopped onion. Stir occasionally, cooking until the beef is nearly cooked through and the onions are softened, about 5 minutes.
- Step: Pour the prepared sauce mixture into the skillet with the beef and onions. Stir well to combine and cook for about 1 minute, allowing the sauce to thicken and coat the meat.
- Step: Add the blanched broccoli florets to the skillet, stirring to mix evenly. Cook an additional 1 minute, just until the broccoli is heated through but still crisp-tender.
- Step: Divide the beef and broccoli mixture evenly among 4 plates or shallow bowls. If using, place a layer of cooked rice or cauliflower rice on the bottom before adding the stir fry on top.
- Step: Sprinkle toasted sesame seeds and sliced scallions over each portion for added texture and fresh flavor.
Notes
To blanch the broccoli, bring a large pot of water to a boil. Add the broccoli florets and cook for 2-3 minutes until bright green and crisp-tender. Immediately drain and place in an ice bath to stop cooking. Drain completely before adding to the stir fry.
