Description
Creamy ground turkey and mixed vegetables with a crispy potato crust. This simple shepherd’s pie is a perfect, protein-packed weeknight meal.

- 1/2 Tablespoon Olive Oil
- 1 pound Ground Turkey
- 1 Onion, diced
- 2 cloves Garlic, crushed or minced
- 1/2 teaspoon Kosher Salt
- 1/2 teaspoon Black Pepper
- 1/4 teaspoon Ground Nutmeg
- 1/4 teaspoon Ground Thyme
- 1 can Fat Free Cream of Chicken, Mushroom, or Celery Soup
- 12 oz bag Frozen Mixed Vegetables
- 4 cups Mashed Potatoes
- 1 oz Grated Parmigiano Reggiano, Gruyere, or Parmesan Cheese
- 1/2 Tablespoon Olive Oil
Instructions
- Step: Preheat your oven to 375ºF.
- Step: Heat the olive oil in a large skillet over medium-high heat. Once hot, add the ground turkey and brown one side for 3-4 minutes before breaking apart and adding the onion. Mix everything together and cook until the turkey is fully cooked and the onions have softened, about 3-4 minutes.
- Step: Turn off the heat and stir in the garlic and seasonings. Cook for about 1 minute until the garlic is fragrant.
- Step: Add the can of soup and frozen vegetables and stir everything together.
- Step: For the crust, microwave the mashed potatoes for 3-4 minutes before adding in an even layer on top of the ground turkey filling. Top with the cheese and a drizzle of olive oil.
- Step: Bake for 50-60 minutes until the crust is golden brown. Top with freshly chopped parsley and grated cheese. Let the pie rest for 15-20 minutes before serving.
Notes
I used 6 ounces of frozen chopped onions, but freshly diced onion works fine. You can substitute mashed potatoes with cauliflower mash for a lower carb option.
