Description

Huli Huli Chicken is a flavorful Hawaiian grilled chicken marinated in a sweet and savory sauce, delivering a perfect balance of smoky and tangy flavors.

Ingredients

Scale
  • 3 pounds of bone-in, skin-on chicken thighs
  • 1 cup soy sauce
  • 1 cup brown sugar
  • 1/2 cup ketchup
  • 1/4 cup rice vinegar
  • 1/4 cup pineapple juice
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon sesame oil
  • 2 green onions, chopped (for garnish)

Instructions

  1. Step: In a bowl, whisk together soy sauce, brown sugar, ketchup, rice vinegar, pineapple juice, garlic, ginger, and sesame oil to make the marinade.
  2. Step: Place chicken thighs in a large resealable bag or container and pour marinade over the chicken.
  3. Step: Seal and refrigerate for at least 4 hours or overnight for best flavor.
  4. Step: Preheat grill to medium-high heat.
  5. Step: Remove chicken from marinade, reserving the marinade for basting.
  6. Step: Grill chicken for 6-8 minutes per side, basting occasionally with reserved marinade, until internal temperature reaches 165°F (75°C) and skin is caramelized.
  7. Step: Remove chicken from grill and let rest for 5 minutes.
  8. Step: Garnish with chopped green onions and serve.

Notes

For an extra smoky flavor, try grilling over charcoal and serve with a side of grilled pineapple slices. Be sure to boil the reserved marinade for 5-7 minutes before using it as a glaze to ensure food safety.
