Ingredients
Scale

- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 bag (26–30 oz) frozen hash browns, thawed slightly
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup sour cream
- 1/2 cup milk
- 2 cups shredded cheddar cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1 tbsp olive oil
- 1 cup frozen mixed vegetables (peas, corn, carrots)
- 1/2 tsp chili flakes
Instructions
- Preheat: Preheat oven to 180°C (350°F) and grease a large baking dish.
- Cook the beef: Heat olive oil in a pan, add onion and garlic, then add ground beef and cook until browned. Drain excess fat.
- Mix the creamy base: In a bowl, mix cream of mushroom soup, sour cream, milk, salt, pepper, and paprika.
- Assemble casserole: Spread hash browns in the baking dish, top with beef mixture and vegetables, then pour the creamy mixture over everything.

- Rest & serve: Let it sit for 5–10 minutes before serving.
Notes
Ensure hash browns are slightly thawed to prevent excess moisture. You can assemble this ahead of time and refrigerate before baking.
