Instructions
- Step: In a heavy-bottomed pot, heat 2 tablespoons of olive oil over medium heat.
- Step: Add the finely chopped onion, diced carrot, and diced celery, cooking for 5-6 minutes until softened.

- Step: Add the diced tomatoes, rinsed beans, cubed potatoes, and vegetable stock, mixing well.
- Step: Bring to a boil, then reduce heat and simmer for about 20 minutes until potatoes are fork-tender.
- Step: Adjust seasoning with salt and pepper, stir in fresh parsley, and serve.
