  • 1 16.3 Ounce Package Biscuit Dough
  • 3 Tablespoons Olive Oil
  • 1 Yellow Onion, diced
  • 3 Carrots, diced
  • 3 Stalks Celery, diced
  • 1 Teaspoon Kosher Salt
  • 1 Teaspoon Ground Black Pepper
  • 5 Cloves Garlic, mashed
  • 1 Tablespoon Italian Seasoning
  • 1 Teaspoon Fresh Thyme
  • 2 Teaspoons Dried Sage
  • 1/2 Cup Flour, divided
  • 4 Cups Chicken Broth
  • 1 1/2 Cups Shredded Rotisserie Chicken
  • 1 15 Ounce Can Coconut Milk
  • 1 Cup Frozen Peas

Instructions

  1. Heat Oil: Add the olive oil to a large pot and heat it on the stove, over medium-high heat.
  2. Sauté Vegetables: Add diced onion, celery, and carrots to the pot alongside sea salt and ground black pepper; cook for 6-7 minutes, stirring frequently.
  3. Prepare Dumplings: Cut each biscuit into 3-4 pieces and toss them in 1/4 cup of flour until coated.
  4. Season: Add the garlic, Italian seasoning, sage, thyme, sea salt, black pepper, and remaining flour to the pot with the vegetables and stir until combined.
  5. Deglaze and Combine: Add 2 cups of chicken broth and scrape the bottom of the pan to deglaze, then stir in the remaining broth, shredded chicken, frozen peas, and coconut milk.
  6. Simmer: Bring the soup to a gentle simmer, add the biscuit pieces, cover the pot, reduce heat to low, and simmer for 15 minutes.
  7. Serve: Remove the lid, turn off the heat, stir, and serve.
