Description

This grilled chicken salad features tender marinated chicken grilled to perfection and served over romaine lettuce with plant-based bacon, avocado, corn, blue cheese, and tomatoes. A hearty and nutritious salad packed with fresh flavors.

  • 1 pound boneless skinless chicken breasts
  • 6 cups romaine lettuce, coarsely chopped
  • 3/4 cup cherry tomatoes, halved
  • 3/4 cup corn kernels
  • 3/4 cup cucumber, chopped
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup cooked crumbled plant-based bacon
  • 1/2 cup blue cheese (microbial rennet), crumbled
  • 1 avocado, peeled, pitted and sliced
  • 3 tablespoons lemon juice
  • 2 tablespoons Dijon mustard
  • 3 tablespoons red wine vinegar
  • 2 teaspoons granulated sugar
  • 2 tablespoons finely minced shallot
  • 1/2 teaspoon dried oregano
  • 1 1/2 teaspoons dried parsley
  • 2/3 cup olive oil
  • salt and pepper to taste

Instructions

  1. Dressing: Whisk together lemon juice, Dijon mustard, red wine vinegar, sugar, shallot, oregano, parsley, and olive oil in a bowl.
  2. Marinate: Divide the dressing in half; add the chicken breasts to half the mixture and marinate for 1 to 8 hours.
  3. Grill: Preheat grill to medium-high and cook chicken for 5-6 minutes per side until browned and cooked through.
  4. Prep Chicken: Let chicken cool for 5 minutes, then slice.
  5. Assemble: Place romaine lettuce in a large bowl and drizzle with half of the reserved dressing.
  6. Toppings: Arrange sliced chicken, tomatoes, corn, cucumber, red onion, plant-based bacon, blue cheese, and avocado on top.
  7. Finish: Drizzle the remaining reserved dressing over the salad and serve immediately.

Notes

The chicken can be marinated for up to 8 hours. For a variation, you can grill the corn on the cob alongside the chicken for a smoky flavor.
