- 1 pound boneless skinless chicken breasts
- 6 cups romaine lettuce, coarsely chopped
- 3/4 cup cherry tomatoes, halved
- 3/4 cup corn kernels
- 3/4 cup cucumber, chopped
- 1/4 cup red onion, thinly sliced
- 1/2 cup cooked crumbled plant-based bacon
- 1/2 cup blue cheese (microbial rennet), crumbled
- 1 avocado, peeled, pitted and sliced
- 3 tablespoons lemon juice
- 2 tablespoons Dijon mustard
- 3 tablespoons red wine vinegar
- 2 teaspoons granulated sugar
- 2 tablespoons finely minced shallot
- 1/2 teaspoon dried oregano
- 1 1/2 teaspoons dried parsley
- 2/3 cup olive oil
- salt and pepper to taste
Instructions
- Dressing: Whisk together lemon juice, Dijon mustard, red wine vinegar, sugar, shallot, oregano, parsley, and olive oil in a bowl.
- Marinate: Divide the dressing in half; add the chicken breasts to half the mixture and marinate for 1 to 8 hours.
- Grill: Preheat grill to medium-high and cook chicken for 5-6 minutes per side until browned and cooked through.
- Prep Chicken: Let chicken cool for 5 minutes, then slice.
- Assemble: Place romaine lettuce in a large bowl and drizzle with half of the reserved dressing.
- Toppings: Arrange sliced chicken, tomatoes, corn, cucumber, red onion, plant-based bacon, blue cheese, and avocado on top.
- Finish: Drizzle the remaining reserved dressing over the salad and serve immediately.
Notes
The chicken can be marinated for up to 8 hours. For a variation, you can grill the corn on the cob alongside the chicken for a smoky flavor.
